Christmas Weekend






Here are just a couple of pictures from our Christmas weekend. We had a wonderful time visiting family and friends, and Grandma Davis even made her rounds just a couple weeks after he knee replacement. We have had the most fun with our new boxing gloves and while we have had some good matches, thankfully no serious injuries.

Jenna braided Emrie's hair for church and it turned into a temporary perm.

Jenna Concert





Jenna is singing in Vocal Union, BYU-Idaho's jazz choir. They did not allow any photos or video of the concert, so we had to settle for a couple of pictures after the show. The concert was great, Jenna had a solo, and Santa Claus showed up at the end much to the delight of Isaac and Emrie.

Making Biscuits


A Sunday tradition in the Davis home is making buttermilk biscuits. Isaac and Emrie helped today and the biscuits turned out just great. Steve has a goal of perfecting a biscuit recipe, the key to flaky biscuits, use real butter and instead of cutting the butter into the dry mix, grate frozen butter cubes using a cheese grater. Also, do not over knead the dough.

Here is our recipe:

2 cups of flour
1 tsp salt
1 T sugar
1 tsp cream of tarter
2 1/2 tsp baking powder
1 tsp baking soda

After mixing dry mix, grate in tow cubes of frozen butter

Lightly mix then add 3/4 cup of buttermilk

Knead dough 8-10 times

Roll out dough and cut into squares or circles.

Bake at 400 degrees for 10-12 minutes or until golden brown!

A Dalmation, Pirates, a Superman who Became a Pirate






We enjoyed a fun Halloween at Dale and Chrissy's, who now live in the perfect trick-or-treating neighborhood. Emrie was a dalmation, Isaac superman, but he later traded with Grant, who started out the night as a pirate. Matthew, Aubrey, and Cooper were pirates. Jenna was an 80's girl.

Happy Birthday Emrie






Well this post is a bit late, but we had a wonderful birthday for our little miracle girl Emrie. She is now 3 and just as pretty and smart as ever, and as you can see from these pictures, our little princess.

Darby Canyon Hike











Matthew's Father-in-Law (along with his son Lance, daughter Maddie, and friend Katrina) was in town for the weekend and he invited us to hike up Darby Canyon to the Wind Caves. We had a perfect fall day, the colors were spectacular and we had a great time. Christopher and Isaac were troopers and really loved the caves.

This hike will now be on may annual list. It is just 3.5 miles in with a great reward at the end with a total elevation gain of 1,800 feet.

Summer Hike in the Tetons






We have been hoping to hike to Table Mountain all summer and finally got the chance on Saturday, September 11. As we approached Driggs we could see that the Tetons had received a bit of snow -- boy were we surprised. We about gave up half way to the top, but then we hooked up with some BYUI students and our pride wouldn't let us quit.

We did learn that if you are hiking on a sunny day and over vast snow fields, that we should not have forgotten sun screen!

Davis Family Concert

On September 1 Cynthia, Matthew, and Jenna, with a brief cameo from Emrie, performed at the Rexburg Tabernacle. This was the last of the weekly concerts held through the summer. Martin's Cove, Sixth Crossing, and Rock Creek Hollow



















For the past several months we have been busily planning a pioneer trek to the LDS historic sites in central Wyoming. From August 4-7 we accompanied 63 youth and leaders to Martin's Cove, Sixth Crossing, and Rock Creek Hollow. We were able to take all of our children, except Matthew. While we were busy with planning and trying to keep everything going according to plan, we had a wonderful time and enjoyed our time together learning about our pioneer heritage, feeling the spirit, and growing closer as a family.
